Key Lime Truffles

 Hi friends! Can you believe how fast this year is going by?! It is already mid-summer and I can’t believe it. I hope everyone has been staying cool in this heat! It is no doubt that summer has been in full effect these past couple of months. I love being to wake up to warm weather and the abundant sunshine. For me, my biggest decision most days is what to bake (and of course, EAT).
I have a yummy, summer-time fine, recipe for you this time. I know I’ve mentioned citrus before, but it is one of my favorite flavors to experiment with. This recipe is all about tart, refreshing, Key Lime. Below you will find a recipe for Key Lime Truffles. They are easier than they sound, and taste like a mini key lime pie with each bite. Ingredients:
1 package of Golden Oreos
4 oz of Cream Cheese
Juice & Zest from TWO Key Limes
1 package of White Candy Melts
Directions:
Zest the key limes, and set aside. Juice the limes, remove the seeds, and set aside in separate bowl.
In a food processor, pulse the entire package of Oreos until they become crumbs. Add the Cream cheese and mix again, only for about 5 seconds. Before the cream cheese and Oreos are fully combined, add the Lime Juice, and HALF of the zest. Pulse one more time, until the dough clumps. You should be able to form it into balls that hold together.
Form Dough into balls, about 1 inch in size. Place on a pan lined with lightly greased parchment paper. Set balls in the freezer to firm, about 20-30 minutes minimum.
While they are in the freezer, melt the candy melts according to the directions on the package.
Use a fork to dip the balls in the candy melts, make sure the cover all the sides.
Sprinkle a bit of zest onto the top of the truffle while the candy melts are still wet. Let dry completely. SERVE & ENJOY!
