Self-Care and Polenta Lasagna
Self-care is a buzz phrase, now more than ever. It’s trendy to rock that self-care vibe and do all kinds of things in the name of taking care of yourself. But what is self-care? Is it a massage when you’ve already thrown your back out or is it consistently carving out time to stretch, exercise, and schedule massages so you don’t get to the point of trying to reverse pain?
In the world of Nutrition, self-care is a way of thinking in which your actions follow. Knowing what foods are healthy and which ones are not healthy is no secret. The trick is finding your motivation to make great choices, consistently.
I love this exercise to help me get my head in the game and reach my optimal health and wellness with zest!
Grab a pen and paper or open your notes app on your phone. Start writing how amazing it is to feel and look your best as if it has already happened. Go for it! In first person, start by writing, “I feel so incredible now that I’ve reached my ____________ goals.” Write for 5-10 minutes focusing on listing the habits and reasons why you have reached those said goals. Play along, it’s worth it. When you write as though you have already reached your goals, your subconscious begins to implement those efficient and goal oriented actions.

2 Tablespoons grapeseed oil
5 garlic cloves, chopped
½ sweet onion, diced
1-2 zucchini, chopped
1 small carton of mushrooms, chopped
1 yellow squash, chopped
2 cups spinach, chopped
1-2 lbs. organic Italian flavored turkey sausage
1 tube polenta
1 jar organic marinara
Optional: 1-2 cups shredded mozzarella
Preheat oven to 350 degrees
In a medium skillet warm grapeseed oil
Add in garlic and onion, sauté until onion is translucent
Add in veggies and sauté until softened
Add in ground turkey and cook until fully cooked
Slice polenta into ¼ inch rounds
Layer polenta, veggie/sausage mix, then optional cheese
Repeat 1-2 more times
Pour marinara over entire dish and top with remaining cheese
Bake, covered for 15-30 minutes or until cheese is melted
and polenta is soft
