Featuring delectable ways to prepare beef, pork, poultry, fish and shellfish, this Big Book has it all! The first thing I can say about this book is… take your time. There is so much information included it can seem a bit overwhelming at first, but once you sit down to read it, you will not put it down. With dozens of tips from the pit master along with recipes for secret rubs and sauces, you will learn how to slow-cook the authentic food of BBQ legends like Troy Black. Another thing I just love about this book, the explanation of sauces and sides! Thick or thin? Red or white? Spicy or not? All of those questions you may have pondered for years are answered in this one book. Did you know there are six different kinds of sauces – White, yellow, red, clear, black and dry rubs. And I am sure more that we may not even know. My sisters and I love to make something we call ketchtard. A special blend of ketchup and mustard that we just love to dip everything in. It may sound gross to some, but to us, it’s pure heaven in a little dish.
