Chicken Salad Cups
I’m coming up on my 10-year wedding anniversary in September, just in time for this Bridal issue! When I think of my wedding planning season, I remember wanting to look my absolute best but simultaneously being under more stress and overall busyness than any other season of my life. After all, a bride is trying to fit all of their wishes, style, and love into one day that reflects her and her soon to be partner-no pressure, right?! Your workouts and nutrition need to be more efficient than ever. Smart nutrition means you reach your goals and feel your best; think more energy, vitality, immunity, and that ever-sought-after bridal glow! When I customize Nutrition Programs for my client’s (brides included) I teach them that deprivation and counting macros and calories has no place in a life-long plan. Instead I educate on what each food group does and then personalize a specific plan with balanced nutrients for each client. As for the big day, take a breath and remember to pause and take it all in girls…all those people are cheering for you!
This Lettuce Cup recipe is a staple for anyone looking to improve the way they look and feel! It’s an easy way to fit a lot of nutrients and protein into a busy day while omitting all the food that may cause bloating, inflammation, or breakouts. Make your nutrition work for you friends!
Serves 2
Ingredients:
1 premade rotisserie chicken or 2
chicken breasts cooked
Bib lettuce washed and drained
½ cup organic mayonnaise or
Greek yogurt
½ teaspoon pink Himalayan sea salt
¼ teaspoon black pepper
½ cup red seedless grapes, cut in half
¼ cup walnuts, pecans, or almonds chopped
¼ cup scallions finely sliced, green parts only
Method:
Shred or chop chicken into bite size pieces and place into a bowl with
grapes and nuts
In a separate bowl mix mayo/yogurt with salt and pepper and gently
combine with the chicken mixture
Sprinkle scallions on top
Serve in lettuce cups
