Fruit & Yogurt Parfait
The health benefits of nuts are well documented. But when it comes to healthy, the walnut is king. According to the California Walnut Board, “Walnuts are the only nut significantly high in omega-3 ALA. Omega-3s are essential fatty acids critical to various body processes. ” We have a great way to get more nuts in your diet.
Granola is easy to make and a fun way to start the day. Most of the ingredients can be found at the Old Town Newhall Farmers Market. Verni Farms has raw walnuts and almonds that they grow themselves. They also grow and press their own olive oil. You can use neutral canola oil for the granola but we prefer the savory taste that olive oil gives it.
Village Organic Herbals sells a wide array of teas, herbs and spices. We love using their omega-3 rich hemp seed in the granola. Our recipe calls for honey, and beekeeper Dave of Blue Ridge Honey keeps our market supplied with about 6 different kinds of honey from Ventura County.
Best of all, the Old Town Newhall Farmers Market has plenty of options to go with your granola. Mom’s Products has multiple flavors of sheep’s milk yogurt and the Achadinha Cheese Company sells 5 different flavors of kefir. Best of all, both vendors will gladly let you try anything.
We like eating our granola plain or on top of yogurt or kefir topped with fresh fruit. We are a true farm-direct market, so we only have what is in season. Thankfully our vendor, Gutierrez Farms, is able to provide our market with berries year round due to mild weather on their farm in Nipomo.
Ingredients:
2 Cups rolled oats (NOT quick cook!)
1 Cup raw walnuts
1 Cup raw almonds
1 Cup dried coconut
1 Cup hemp seed
1/2 Cup honey
1/2 Cup canola or olive oil
Directions:
Mix all dry ingredients. Add honey and oil and mix thoroughly. Taste and season if desired. Line a rimmed baking sheet with parchment paper. Spread granola evenly into pan. Bake at 300 degrees stirring every 15 minutes until granola is golden brown and dry, about 45 minutes total. Cool and store in container outside the fridge.
