Lemon Mint Arugula Summer Green Salad With Burrata Cheese
Summer is here and that means warmer days. It also means beautiful summer produce is in season! We like to serve up a light yet hearty salad that just screams summer. To do this, we put together a combination of beautiful summer produce, tossing it in a lemony mint dressing with fresh burrata on top.
You can adapt this salad using just about any vegetable that is typically eaten raw. We recommend using what’s local and in season. For that we turn to our local certified farmers markets. Here, the produce is typically 12 to 48 hours old. It’s fresher and tastes better. It also lasts longer so it’s not going to rot in your fridge quickly. Fresher produce also has far more nutrition.
We start by building a base of arugula, mint, basil and sugar snap peas. We then throw together a simple salad dressing of honey, lemon juice, mint, olive oil and Dijon mustard. We topped this all with some fresh burrata cheese and sweet pea microgreens.
This all goes together very quickly and best of all, virtually all of the ingredients are found at our local farmers markets. This includes local honey harvested right here in the Santa Clarita Valley, farm direct olive oil, gorgeous produce and fresh burrata cheese.
Put this together using truly fresh produce and get a real taste of summer.

SALAD INGREDIENTS
3 Cups fresh arugula, chopped into small pieces
½ Cup fresh mint, leaves only, chopped if desired
½ Cup fresh basil, roughly chopped
2 Cups sugar snap peas, cut in half
Sweet pea microgreens
2-4oz balls fresh burrata
SALAD INSTRUCTIONS
Build the salad layering all of the greens and topping with the sugar snap peas.
DRESSING INGREDIENTS
½ Cup extra virgin olive oil
½ Cup fresh lemon juice
¼ Cup fresh mint
2 Teaspoons Honey
1 Teaspoons Dijon mustard
Salt and pepper to taste
DRESSING:
Add all ingredients dressing ingredients to a food processor or blender. This can be hand chopped and stirred together though is not preferred. Mix until blended. Pour over salad.
Top with fresh burrata and sweet pea microgreens.
