Peppermint Marshmallow Brownies
Happy Holidays!!!
Can you believe it?! The Countdown is on! This is my absolute favorite time of year…not only because of all the yummy treats, but you can just feel happiness in the air. I jump the gun with recipes every year because I’m a Pinterest addict and I just LOVE the holidays. My mom lives for Christmas time, and starts snow-flaking the heck out of our house as early as she can. I’m talking November 1st, it’s go time for this family…so I guess you could say that’s where I get it from. Most people have a list full of presents that they want or want to buy for people. I have a list as well, only mine consists of baked goods that are must-makes for the holiday season. I’m going to share an easy yummy recipe that adults and kids will love.
These are my Peppermint Marshmallow Brownies, and man, are they good. They are extremely easy and perfect for a last-minute dessert idea for your dinner parties. Peppermint and Chocolate are one of my favorite pairings, add marshmallow to the mix and I’m sold. I hope everyone enjoys the holiday season with their loved ones!

*Makes 16 brownies*
½ cup (1 stick) unsalted butter
2 oz semi-sweet chocolate
½ cup unsweetened cocoa
¾ cup packed brown sugar
2 eggs
½ cup all-purpose flour
¼ tsp salt
1/3 cup milk
1 tsp vanilla
2/3 cup chopped pecans (optional)
1 & 1/3 cup mini marshmallows
Crushed Candy canes
Heat the oven to 350°F. Spray an 8-inch square pan and set aside.
In a saucepan, melt the butter, chocolate and cocoa on low heat, stirring until smooth. Remove from heat and transfer to a heat-resistant bowl. Stir in the sugar, eggs, flour, vanilla, salt, milk and (optional) nuts until combined.
Spread the batter into the prepared pan. Bake just until set, about 20 minutes. Remove from the oven, top with the marshmallows and bake until the marshmallows are puffy, about 5 minutes. Immediately sprinkle with desired amount of crushed peppermint. Let cool in pan. Enjoy!
