Sweet & Citrusy – Baking With Tina: When life gives Tina lemons, she makes dessert!
Hi Everyone! I’m back and I’m excited to share with you a springtime favorite of mine! I don’t know about you, but I am pretty excited about the weather getting warmer! When I think of spring, my mind immediately goes to citrusy, fruity and refreshing flavors. Lemon has always been one of my favorite flavors because of its versatility. It’s sweet and refreshing but also has just the right amount of tang. This is one of my favorite recipes because – let’s be real – anything sour mixed with sugar is going to taste pretty great.
Lemon Bars are one of my favorite desserts. I’ve been making these with my mom since I was a little girl, and she makes the best ones I have ever tasted. I may be a bit biased, but try them out for yourself – and soon people will be saying the same about you! The one difference I’ve noticed about my mom’s lemon bars is they are a bit thinner compared to others. Most lemon bars I’ve seen are very dense and thick. These, however, are the true example of “less is more.” Check them out below. I hope you love them as much as we do!
LemonBars
Preheat oven to 350 degrees.
Crust:
2 sticks (1 C) butter, creamed
1 C powdered sugar
2 C flour
Combine ingredients into a Cuisinart or hand mixer, and press
into a 13 x 9 pan. Bake for 20 minutes at 350°.
Topping:
4 large eggs
2 C sugar
4 Tbsp. flour
½ Tsp. salt
1 Tsp. baking powder
½ C lemon juice
4 Tbsp. lemon rind
Cream eggs and sugar. Add remaining ingredients and beat until well blended. Pour on top of hot crust. Bake 20 more minutes at 350°. Cool and cut into squares or diamond shapes. Dust with powdered sugar. Enjoy!
