Breakfast Toasts

It’s often called the most important meal of the day. But in a fast-paced world, breakfast is often relegated to processed food and a quick cup of coffee. We found that planning your meals out and making sure you have the right ingredients on hand is extremely helpful in eating better.
Breakfast toasts are often our go-to breakfast especially when in a hurry. We present two different options below. However, a slice of toast is just a blank canvas and you can top it with whatever you want.
We recommend starting with high quality bread. Locally here in Santa Clarita, we host three different certified farmers markets. Each has their own artisan bread baker. All of the breads are sourdough, contain no preservatives and are free of unnecessary sweeteners and unnatural ingredients.
Our Wednesday market hosts Jerad who sells bread as The Carbfather. Our Saturday market hosts Hasi Bread. Owner Matias (aka Hasi) adds tumeric and butterfly pea flour to the bread giving it a distinct and beautiful color. Finally our Sunday Valencia FivePoint market hosts Breadbasket Bakehouse. Owner Leslie crafts her artisan breads right here in Santa Clarita.
Of course our farmers markets have a variety of ingredients to top the breads with. Avocados are available almost year round. The markets host mushroom farmers with a variety of mushrooms. Microgreens are a nutritional powerhouse and add great taste and texture to the toasts. Don’t forget about the farm direct eggs raised locally of course. Dairy products such as fromage blanc and fresh burrata/mozzarella are available at our weekend markets.
At our certified farmers markets, all of the produce being sold is local. The produce is typically picked and at the market within 12 to 48 hours. Compare that to supermarkets where produce is often weeks or months old. Fresher produce tastes better and has more nutrition.
With your fridge stocked with good ingredients, throwing together a quick and delicious breakfast is much easier.

TRADITIONAL AVOCADO TOAST
Ingredients
1 Slice of bread, toasted
½ Avocado
¼ Cup Cherry tomatoes
Olive oil
Fresh thyme
Fresh burrata
Salt and Pepper
Directions: Mash the avocado onto the toast using a fork and spread evenly. Top with salt and pepper to taste. Cut tomatoes in half. Toss in olive oil and bake in a 400° oven for 10 minutes. Place tomatoes on top of the avocado. Top with a spoonful or two of fresh burrata. Dust with diced fresh thyme.

SAVORY AVOCADO TOAST
Ingredients
1 Slice of bread, toasted Fromage blanc or cream cheese
¼ Cup mushrooms, sliced
One egg
Olive oil
Microgreens
Salt and Pepper
Directions: Spread fromage blanc onto the toast. Saute mushrooms in a skillet with olive oil until browned. Season with salt and pepper and place onto the toast. Prepare one egg as desired. Any preparation will work. Top with fresh microgreens.
