Crock Pot Salsa Chicken
Congratulations to the truly amazing, nominees for the “élite Magazine Women in Business 2018”. Often women, in general, are trying to do it all. Our gift to multitask can turn into our constant mode of living. As a woman in business myself, I’m often asked how I balance it all. Here is my answer: its not a matter of balancing it all, but rather a constant juggle. As a working mom with two small children, my plate is wonderfully full. My goal is not to balance it all, that feels like too much pressure for perfectionism which is so often a trap for many of us mamas. Instead, I juggle; and my goal is that my feet are grounded enough (most of the time) that if one of those theoretical balls needs a little extra attention I’m in tune enough to see that and to adjust so that all continues to juggle well. When I feel like our family is more like ships passing in the night or my jeans get too tight, or my kids are frazzled…I turn to more family dinners at home then eating out. The simple act of sitting at a table and pausing is SO good for everyone in the family. Here is my go-to recipe for those seasons. The good news is that it takes about 10 minutes of prep time, so you can keep up with being the Boss Babe you are!
Ingredients:
2 lbs. boneless skinless organic chicken breast or thighs
1-2 small jars of salsa (our family fave is the Trader Joe’s Pineapple Salsa)
Optional Toppings:
Trader Joes frozen Organic Brown or Jasmine White Rice
Diced Onion
Chopped Romaine
Shredded Cheese
Ready made Guacamole
Sour Cream or better yet Plain Greek Yogurt
Corn Tortillas
Olives
Cilantro
Method:
Place the chicken into a crock pot and cover with the salsa. Cook on low for 8 hours. Using two forks, shred the cooked chicken.
You can microwave the frozen rice for 3 minutes although I highly recommend placing it in a glass covered dish instead of the plastic. Better yet, you can make fresh rice if you have extra time.
I double this recipe and freeze half to use for tacos or enchiladas another night.
This is so family friendly as you can customize everyone’s toppings. Some of us do a taco salad version with the romaine and others do burrito bowls or tacos.
